A stack of pancakes a day keeps a bad mood away. So if you’re a sweet breakfast lover, why not try your hand (quite literally) at these creamy banana and ricotta hotcakes? In addition to its smooth and creamy taste, ricotta also has a whole host of other benefits, particularly on the health front. It’s high in calcium, rich in Omega 3 and is a complete protein as it contains all of the essential amino acids.
Whoever said pancakes are just for weekends, has clearly never tried these delicious and nutritious Banana and Ricotta Hotcakes.

1 cup ricotta
2 large eggs
3 tbsp flour (plain or gluten-free)
1 tsp vanilla extract
1 banana (sliced)
2 tsp honey or maple syrup
In a small bowl, combine ricotta, eggs and flour and mix until smooth.
Heat a nonstick fry pan over moderate heat and spoon 2 tablespoons of batter into the pan (this will make 1 hotcake).
Cook for 1-2 minutes or until golden brown, then flip and cook the other side.
Repeat until all mixture is used.
Serve topped with sliced banana and sweetener of choice
